50g of your prepared Mango Puree

1. Blend the Mango Puree: Put the 200g of chopped mango and 2 tablespoons of sugar in a blender. Blend them until completely smooth. The sugar is very important here. It stops the fruit acid from spoiling your milk later. Save 50g of this puree in a small bowl to use in the whipped cream.
2. Cook the Custard Base: Take a cooking pot and add the milk, cornstarch, and sugar. Mix them well until there are no dry lumps. Stir in the 150g of mango puree. Cook this mixture over medium heat. Keep stirring for about 5 minutes until it boils and gets very thick.
3. Fill the Base Layer: Pour the hot mango custard straight into your clear serving cups. Let the cups sit until the custard is completely cold and firm.
4. Make the Mango Whipped Cream: Beat the cold whipping cream and sugar together until it gets thick and stands up in stiff peaks. Gently fold in the 50g of mango puree you saved earlier. Mix slowly so the cream stays light and fluffy. Put this cream into a piping bag.
5. Assemble the Layers: Take your cups with the cold custard. Add a layer of crumbled vanilla cake on top of the custard base. Next, add a layer of fresh chopped mangoes over the cake crumbs. Finally, pipe a tall swirl of the mango whipped cream on top.
