👩🍳 Step-by-Step Instructions
1. Crush the Cookies: Put your 200g of Lotus cookies in a food processor. Blend them until they turn into a fine sandy crumb. You can also put them in a zip bag and crush them with a rolling pin.
2. Make the Custard Mix: Take a small bowl and pour in a quarter of your cold milk. Add the 1.5 tablespoons of custard powder to it. Stir this very well until the powder completely melts. This trick stops your custard from getting lumpy later.
3. Cook the Custard: Pour the rest of your milk into a cooking pot. Add 1 tablespoon of sugar and stir. Now pour in your cold liquid custard mix. Cook this over medium heat. You must keep stirring all the time until it turns into a thick and glossy pudding. Let it cool down just a little bit.
4. Whip the Cream: Put your heavy whipping cream in a clean bowl. Add 1 tablespoon of sugar and a pinch of vanilla. Use a mixer to beat the cream until it stands up in fluffy peaks. Put this whipped cream into a piping bag.
5. Build the Dessert Cups: Take your clear square cups to show off the beautiful layers. Put a good spoonful of crushed cookies at the bottom. Next, add a thick layer of your warm custard over the crumbs. Add another layer of crushed cookies on top of the custard. Finally, pipe a tall swirl of your whipped cream on the very top.
6. Decorate and Serve: Sprinkle a tiny bit of leftover cookie crumbs on the fluffy cream. Stick one whole Lotus Biscoff cookie right into the top of each dessert.
💡 Tips for Success
Always mix your custard powder with cold milk first. If you add dry powder straight into hot milk, you will get bad lumps. Use clear glasses or plastic cups for this recipe. Seeing the neat layers is what makes this dessert look so special.
🥡 How to Store
Keep your dessert cups in the fridge. They taste amazing when they are chilled. The cookie crumbs will get a little soft and cake-like after sitting in the fridge. They will stay fresh and yummy for up to 3 days.
