1. Make the Basic Dough: Mix the softened butter, icing sugar, salt, and vanilla until smooth. Add the egg and mix well. Fold in the flour and baking soda to make a soft dough. Do not overknead the dough.
2. Shape the Stems: Take about 200g of the plain dough. Shape small pieces into little cones to look like mushroom stems. Put them in the fridge for 30 minutes. Chilling helps them keep their nice shape while baking.
3. Prepare the Red Caps: Color a part of your dough red with gel coloring. Add a little cocoa powder to deepen the red color. Roll this red dough inside a clear freezer bag. This is a great trick to avoid using extra flour. Extra flour can make your cookies hard.
4. Make the Chocolate Core: Take another 200g of plain dough and mix it with the 80g of chopped chocolate. Make small round balls with this mixture. Cover these balls with the flat red dough you just rolled. Now your mushroom caps are ready to bake.
5. Assemble the Cookies: Bake the stems and caps and let them cool. Melt some chocolate to act as glue. Let the melted chocolate cool down a bit until it gets thick. Use this thick chocolate to stick the stems to the caps. Thick chocolate sets much faster.
6. Add the Cute Dots: Melt some white chocolate. Dip the flat end of a wooden stick into it. Gently tap the stick onto the red caps to make dots. Make big and small dots so they look like natural mushrooms.
